Restaurant construction is two projects sharing an address. Back of house is a mechanical and health-department problem: Type I hood and suppression, make-up air, grease interceptors, floor drains and slopes, and sanitary finishes that pass inspection. Front of house is a design and finish problem, and it is what the customer judges.
We build both, and we schedule against the reality that every week a restaurant is not open is a week of rent with no revenue behind it.
